The Hazard Analysis and Critical Control Points (HACCP) is not a quality management system as such. It rather sets guidelines and principles to prevent the pollution of products.

Manipulation of foods, either fresh or processed, is usually guided by these guidelines in order to guarantee their harmlessness. From its beginning, this system has received wide acceptance from international organizations related to the food industry, from production to commercialization. It has become universally accepted.

The core idea of harmlessness is that the food will not damage the consumer’s health. Therefore, HACCP is a complement to other food-related efforts, such as beneficial contributions to the health and wellbeing of people. It is one of the tools for a satisfactory quality of life.

For consumers and distributors, the Global Gap certification is a guarantee that the products comply with high levels of quality and safety, and that they have been produced respecting viability, safety, hygiene and wellbeing of workers and the environment, and with respect for animals. Without this certification farming products may encounter problems when trying to enter some markets.

Global Gap has become a mandatory certification, since most European distributors demand it as a proof of good practices in the food and agriculture market. Fruit and vegetable, stockbreeding and fish farming companies must hold this certification in order for their distributors to sell their products.
